Rich smoked salmon pasta

This quick and easy pasta recipe combines a perfect marriage of flavours – pasta, salmon and hollandaise sauce.

375 g (13oz) large pasta shells
200 mL carton fresh hollandaise sauce
150 g (5oz) smoked salmon trimmings
2 tbsp. freshly chopped flat-leafed parsley


  • Bring a large pan of water to the boil, add 1tsp salt and the pasta shells, then cook according to the instructions on the pack. Drain well and return to the pan.

8 portions Salmon (each about 100 grams)
1, juiced Limes
freshly ground pepper
3 Tbsps vegetable oil
400 grams Tagliatelle
2 egg yolks
zested, 1/2 lime Limes
100 grams butter
4 stalks Lemon balm
freshly ground pepper


  • For the salmon: Rinse salmon fillets, pat dry and sprinkle with lime juice. Season with salt and pepper.

    For the pasta and sauce: Cook pasta according to package instructions in plenty of boiling salted water until al dente.

  • Whisk egg yolks with lime zest and juice in a metal bowl. Place over hot water bath and whisk until creamy. Gradually add butter cut into pieces. 

    Heat oil in a pan and cook salmon for 3 minutes per side. 

  • Rinse lemon balm, shake dry and pluck off leaves, chop finely. Season sauce with salt, pepper and sugar and add lemon balm leaves.
  • Drain pasta. Arrange salmon and pasta on plates, drizzle with the sauce and serve.

This is a pasta recipe with shrimp and sausage that totally rocks. I wouldn’t recommend eating this every day… unless you have a death wish 🙂

With that said, it is a great dish with awesome flavors.

So, you ready… Let’s get into the kitchen.

6 large shrimp, jumbo variety, about 4 ounces
4 ounce(s) chorizo, mild or hot, your choice
4 ounce(s) dry fettuccini pasta
1/2 teaspoon(s) olive oil
3 tablespoon(s) lemon juice, freshly squeezed
1 tablespoon(s) capers, with juice
– dry wine, just a splash for deglazing
– kosher salt, to taste
– black pepper, freshly ground, to taste
1/4 cup(s) hollandaise sauce, more on that later


  • Gather your ingredients.
  • Cook the pasta according to the package directions.
  • Drain the pasta and reserve.
  • Add the olive oil to a sauté pan over medium heat.
  • Add the chorizo and allow brown on both sides, about 2-minutes per side.
  • Chef’s Note: Chorizo can generate a bit of grease. When it’s finished cooking make sure that you drain off any excess before continuing.
  • Deglaze the pan with a generous splash of the dry white wine.
  • Add the shrimp, the capers, and the caper juice to the pan.
  • Chef’s Tip: Sauté the shrimp until they have lost their pink, and begin to turn opaque, about 2 to 3 minutes.
  • Add the remaining lemon juice, and toss with the ingredients.
  • Add the pasta to the pan, and toss with the chorizo and shrimp, about 1 minute.
  • Add to a large plate.
  • Drizzle with the hollandaise sauce, and serve while still warm. Enjoy.
