For a burst of flavour and nutritious ingredients, try this peanut porridge made with quinoa, oat, and mashed banana, topped with a blueberry compote.

45 g of Jumbo Rolled Oats
45 g of Quinoa
350 mL of Almond Milk
2 Bananas
35 g of Crunchy Peanut Butter
1 pinch of Salt
120 g of Blueberries
1 tsp of Vanilla Extract
2 tsp of Ground Flaxseeds


  • In a medium pan, put the oat flakes and quinoa. Add almond milk, 1 mashed banana, half of the peanut butter, and salt. Bring to a boil, then reduce the heat to low and simmer for 8 minutes, stirring occasionally, until you have a creamy porridge.
  • In the meantime, add the blueberries to a small pan with vanilla and a splash of water. Place over low heat for 5 minutes until the berries soften and release their juices.
  • Divide the peanut porridge between serving bowls. Top with the blueberry compote, 1 sliced banana, and the remaining peanut butter. Sprinkle with flaxseeds and enjoy!
