This is maybe the most addictive mixture I have ever found. Good to eat with just saltine crackers. It’s a good way to use those end of the garden peppers that everybody always has way way too many of. Be warned, this stuff is like crack in a jar, once you start you can’t stop till the jar is empty.

1 1/2 pint – apple cider vinegar
2 – cloves of garlic chopped fine
1 1/2 cup(s) splenda or sugar
1/2 cup(s) olive oil
1 cup(s) italian salad dressing
36 ounce(s) ketchup
4 pound(s) all beef wieners cut into 1/2-3/4 inch chunks
6-8 cup(s) sweet or hot banana peppers cut into 1/2-3/4 inch chunks


  • Mix first 6 ingredients and bring to a boil.
  • Add peppers and wieners and return to a boil. Cook 10-15 min, check for doneness, peppers should have a tad of tooth (don’t over cook peppers will turn out mushy).
  • Pack in prepared Ball style canning jars and process 10-15 minutes

30 hot peppers
2 (16 ounce) packages hot dogs
32 ounces ketchup
3/4 cup oil
1 3/4 cups vinegar
1/2 cup sugar
8 garlic cloves


  • Seed peppers and chop. Also chop hot dogs.
  • Mix the rest of the ingredients and place into at least a 6-quart stock pot. Add hot dogs and bring to a boil.
  • Add peppers and cook for 10 minutes.
  • Place one clove garlic into each jar (optional).
  • Ladel mixture into jars. Wipe rims, apply sterilized lids and rings.
  • Pressure can 10 pounds for at least 30 minutes (90 is best – it won’t hurt anything).

This quick pickled pepper recipe allows you to preserve peppers with water bath canning. Sweet peppers will result in a tasty topping for adults and kids alike, while adding hot peppers to your pickled mix will obviously increase the heat.

5 Cups Diced Peppers, Mix of Hot and Sweet
5 Garlic Cloves
2 Cups Cider Vinegar
1 Cup Water
2 tsp Canning Salt
1 tsp Sugar


  • Begin by preheating your water bath canner.
  • Divide chopped peppers between 5 half pint jars and top each jar with a garlic clove.
  • Bring Vinegar, Water, Salt and Sugar to a boil in a saucepan.
  • Pour the brine over the peppers in each jar, leaving 1/2 inch headspace.
  • Process in a water bath canner for 10 minutes. (15 minutes for 1000-6000 ft elevation.)
