Ingredients:

2 lbs ground chicken qeema
1 onion chopped
1 red capsicum chopped
1 large green chilli
1/2 cup cilantro
4 cloves garlic
2 tbsp ghee
Salt to taste
1 tsp red chilli flakes
1 tsp pepper powder
1 tsp Kashmiri Mirch
1 tsp lemon juice

Steps:

  • Grind onion, capsicum, cilantro, garlic and chilli in a food processor and squeeze out all the water and juices from it.
  • Grind ground chicken with salt, chilli flakes, Kashmiri Mirch, pepper and lemon juice in the same food processor and then take it out in a bowl.
  • Add in the ground onion, capsicum, garlic, chilli and cilantro mixture to the ground chicken. Let it marinate for 1 hour.
  • Take the marinated chicken and make Kababs using flat skewers.
  • Place the Kababs on preheated tawa or grill and cook till each side is golden and chicken is cooked from inside. Ready!

Ingredients:

1 medium onion
1 tablespoon sumac
4 Hungarian or Italian peppers
4 tomatoes, halved
1 pound lean ground lamb
1 1/2 cups finely chopped onion
2 cloves minced garlic
1/2 teaspoon crushed red pepper flakes
1/2 cup chopped Italian parsley
1/8 teaspoon salt
Freshly ground black pepper to taste
Flat bread (Afghan) or 4 pitas

Steps:

  • Slice the onion as thinly as possible, and mix in the sumac, crushing the onion to release the juices.
  • Prepare stove-top grill, and grill whole peppers and tomato halves until they are tender; set aside.
  • Combine the lamb, chopped onions, garlic, red pepper, parsley, salt and pepper to taste, and knead to make a paste.
  • Divide into 4 equal portions, and mold on 4 flat skewers to make long sausage-like rolls.
  • Grill lamb kebabs on all sides, until they are browned.
  • Heat bread, and serve with kebabs, with onion-sumac relish and peppers and tomatoes on the side.

Ingredients:

½ p red capsicum – roughly chopped
2 tablespoons flat-leaf parsley – roughly chopped
2 tablespoon tomato paste
1 tablespoon olive oil
1 lb ground chicken
2 teaspoons paprika
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground sumac – see note 1
1 teaspoon smoked paprika
½ teaspoon red pepper flakes – see note 2
¼ teaspoon dried oregano

Steps:

  • Place the chopped capsicum, parsley, tomato paste, and olive oil in a mini food processor and blitz to a paste. If you don’t have one, then you can grate the capsicum.
  • ½ red capsicum (roughly chopped)
  • 2 tablespoons flat-leaf parsley (roughly chopped)
  • 2 tablespoon tomato paste
  • 1 tablespoon olive oil
  • Place the ground chicken in a bowl and tip in the capsicum mixture.
  • 1 pound/450g ground/minced chicken
  • Add in all the herbs and spices.
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon sumac
  • 1 teaspoon smoked paprika
  • ½ teaspoon red pepper flakes
  • ¼ teaspoon dried oregano
  • Use your hands to combine the chicken and capsicum mixture thoroughly.
  • Using wet hands, take a handful of the chicken mixture, form a ball with it, and then use your hands to pull it into a sausage shape; push the kebab stick through and then use your hands to spread the mixture out to an even thickness. (- see note 3)
  • Cook the kebabs on the grill or in a heavy-based skillet or griddle. They will need about 4-5 minutes on each side.
