Crunchy Chicken Nuggets

These tasty tidbits cook up in minutes and appeal to people of all ages!

Makes 4 servings

1/3 cup + 2 teaspoons unsweetened wheat germ
1 teaspoon paprika
1/2 teaspoon coarsely ground black pepper
1/4 teaspoon salt
15 ounces skinless boneless chicken breasts, cut into bitesize pieces
2 teaspoons vegetable oil

In gallon-size sealable plastic bag, combine wheat germ, paprika, pepper and salt; seal
bag and shake to blend. Add 3-4 chicken pieces; do not crowd bag. Seal bag and
shake to coat. Place coated chicken pieces on large plate; repeat, using remaining
chicken pieces.
In large nonstick skillet, heat oil; add coated chicken pieces. Cook, turning as needed,
10-12 minutes, until golden brown on all sides and cooked through.

EACH SERVING PROVIDES: 1/2 Fat; 3 Proteins; 1/2 Bread
